Atlantic King Salmon (vinaigrette)
|
Aki-san applies a slightly different amount of salt
and vinegar in each season to balance the flavor.
|
|
Ingredients:
1 package of Atlantic King Salmon (vinaigrette), half a small onion, half a
lemon, 1 TBS of capers, a few TBS of olive oil, 1-2 TBS of soy sauce, 1 quarter
of melon (option)
How to serve:
Slice salmon about a quarter inch thick
and set aside. Slice onion finely. Pour cold water in
a bowl and add the sliced onions. Take the onions
out and drain water immediately. Place salmon slices on a plate. Sprinkle the onions, capers and pour the olive oil on top. Squeeze lemon and
serve with soy sauce. This
salmon plate also goes well with sliced melons.

Seafood Mix |
Aki-san boils 4 or 5 kinds of fresh seafoods (such as scallops, shrimps, and
fish in season) with a pinch of salt. This Seafood Mix is not fully cooked, but
90% cooked. The Seafood Mix makes your cooking easy and fun. Enjoy!

How to use:
It's good to use for
spaghetti, curry, chowder soup, and so on. Whatever
you cook, add the Seafood Mix at the last moment
so that you don't get overcooked. For seafood salad, you may simply add them as is.

Chicken is marinated with special miso. It is still tender
even long after you grilled. Great for BBQ parties, picnics, and potlucks.

Grill:
Grill chicken thighs in a BBQ grill or an oven. If you use an oven, set the
temperature to 500°F and warm the baking sheet before you broil the meat. Cut chicken into severral pieces and place
the meat on the top rack and broil each side for about 2 - 3 minutes.
(depending on the temperature of the oven and meat)
Serving:
Sautéed mushroom and butter with butter would be a good combination with grilled chicken.

Chicken is marinated with the original home made sauce, which is made out of
natural ingredients, like onion, pear, kiwi, garlic, sesame, etc. This is a
very popular product. Customers always come back for more. It is still tender
even long after you grilled. Great for BBQ parties, picnics, and potlucks.

BBQ:
The best way to cook is BBQ.
Grill:
Grill chicken thighs in a BBQ grill or an oven. If you use an oven, set the

Marinated
Fish (miso flavor
/ Kasu flavor) |

Aki-san marinates fish with special miso or kasu (sake lees) when the
fish is still fresh. These have been very popular.
|

Grill:
Don't wash the marinated fish before you cook! Grill it at high heat, but not
so close to the fish. Preheat oven for broil at 500°F. Place the fish either on
the middle rack or the lower rack. Grill the fish skin side down first for 2 to
3 minutes, then turn it over and grill it for another few minutes. In this way,
the fish can absorb the flavor from the skin side. (The cooking time depends on
the temperature of fish and oven, and the thickness of the fish)

Butter sauté:
Heat frying pan over high heat. Put 1 tablespoon of butter and miso flavored
fish in the pan, and cook one side for 1 to 1.5 minutes (until brown), then
turn it over and cook the other side for less than 1 minute. (Don't over cook.)
Kasu flavored fish doesn't go well with butter. Butter sauté is for miso
flavored fish.
